There’s something about feta, spinach, red onion, a drizzle of olive oil, all on a toasty whole wheat pita, that makes me so excited!
I usually, okay…pretty much always… have whole wheat pita bread on-hand.
Boy was I happy I had it today.
These Mediterranean Whole Wheat Pita Pizzas were out of this world, and my boyfriend agreed whole-heartedly.
First, take your pita bread and place it on a cookie sheet.
That’s right, no cutting, opening it, nothing! Just place on cookie sheet.
Next, spread your favorite pesto over the bread.
(Homemade would be nice, but I didn’t have time, just used the store bought pesto I had in the pantry)
Now for the fun part!
Sprinkle some chopped tomato, red onion, spinach leaves, black olives, and anything else you would like (mushrooms, walnuts, etc).
Over your toppings, sprinkle some feta and drizzle a bit of olive oil. This helps the toppings stay a nice consistency, and not get too crunchy.
Lastly, add freshly ground pepper over top of the pizza and bake in a 350°F oven for 10-12 minutes.
(Or until feta is all gooey and melty and pita is a bit toasty) Yummmmm.
If you are a cook that really prefers a measured recipe, I’m adding the approximate measurements for making these pita pizzas, but you can really add as much, or little, of the ingredients according to your taste buds!
Mediterranean Pita Pizzas
6 Whole Wheat Pitas
6 oz of Pesto
2 chopped plum tomatoes
1 cup chopped spinach
1/4 cup chopped olives
1/2 cup feta cheese, crumbled
Olive Oil to drizzle
Fresh ground pepper
1. Preheat oven to 350°F. Lay pita bread on a baking sheet.
2. Spread pesto over each pita. Sprinkle tomatoes, spinach, olives, and feta. Drizzle with olive oil and top with pepper.
3. Bake for 10-12 minutes, or until cheese is melted and pita is toasty.
Makes a wonderful appetizer or main course.
