Had a few sweet potatoes left and was wondering what to do with them for dinner.
Sweet potato fries? Too fattening for a weeknight!
Sweet potato soup? Takes too long on a weeknight!
Roasted sweet potatoes? Just right…for a weeknight!
Throw them in a bowl.
Chop us some onions and peppers and add them to the fun.
Drizzle olive oil, sea salt, and oregano.
Give ’em a little shake and place in a baking dish.
30 minutes at 350°F with a little flip somewhere around the 15 minute mark.
Couldn’t be any easier.
No mess, no fuss, just sweet yumminess.
Good thing there are leftovers 🙂
Roasted Sweet Potatoes
2 sweet Potatoes peeled and sliced
1/2 a red onion, chopped
1/4 cup diced bell pepper
1/2 teaspoon oregano
1/8 teaspoon garlic powder
1/4 teaspoon salt
Freshly ground pepper
1 Tablespoon olive oil
1. Preheat oven to 350°F. Mix prepped sweet potatoes, onions, peppers, oregano, garlic powder, salt, pepper, and olive oil in a bowl.
2. Pour evenly into a baking dish and bake for 30 minutes, or until sweet potatoes are fork tender.
Healthy, tasty, and easy.
