I never thought (until now) to share my go-to dessert recipe that never fails to hit the spot when my sweet cravings settle in (which is more often than not).
So, here it is 🙂 Enjoy.
Coconut Honey Yogurt Fruit Parfait
It’s crazy easy.
It’s fresh tasting.
It involves ingredients I always have.
And best of all, it lends itself to tons of variations.
First, choose a yogurt you enjoy. Greek yogurt works well because it has a thicker consistency. (I used vanilla for my parfait)
Next, drizzle a little honey over the yogurt. Mmmmm…I love honey!
Now add a sprinkle of shredded coconut. (Toast it for a few minutes in the oven and it’s even yummier, and provides a little crunch)
Finally, top with any berries, or fruit, you have on-hand. I used a bag I had of frozen berries which had raspberries, blueberries, and blackberries for the one pictured.
The creaminess of the yogurt, texture and sweetness of the coconut, and tartness of the berries work beautifully together. My boyfriend often says he prefers it over ice-cream! Ahhhh…ice-cream…NEVERMIND! Back to the HEALTHIER alternative!
Play around with this recipe and create unique flavor combinations.
Use a variety of yogurt flavors: coconut, pineapple, peach, mango, blueberry, strawberry, etc.
Use a variety of mix-ins: walnuts, pecans, almonds, granola, a FEW chocolate chips, etc.
Use a variety of fruits (a few of my favorites): Strawberries, blueberries, fruit preserves, sliced bananas, mango, kiwi, etc.
This is a great way to treat yourself to a delicious dessert, without feeling guilty about indulging!
It would make a great breakfast too!
