My favorite meal to experiment with, besides dessert, is breakfast. There are so many different ways to flavor oatmeal, such an array of pancake recipes, and tons of ways to cook up eggs. Yesterday I was inspired to make “Breakfast Quesadillas” as a Sunday surprise for my boyfriend.
Breakfast Quesadilla Perfection
Here’s what I did:
First, spray the saute pan with non-stick spray and saute the Jennie-O Lean Turkey Sausage until well cooked. Add the egg whites and continue to cook until the eggs are no longer runny. Season with a sprinkle of salt and pepper.
Reduce the heat to low. Remove the eggs and place in a bowl. Lay whole wheat tortilla in the saute pan. Spread egg mixture onto one side of the tortilla. Sprinkle with cheese and fold the tortilla over. Allow to cook until golden on the first side, then carefully flip and toast up the other side. Cut into wedges. Add a dollop of plain Chobani Greek yogurt and there you have it!
Add a bit of vanilla yogurt with granola on the side, because he’s a growing boy. 🙂
Lay out the sports section of the newspaper, pour a fancy glass of OJ, and then say…
“Wake up, honey…your breakfast is ready!”

Variations: Add your favorite veggies when sauteing the turkey sausage, this will change up the flavors and add to your daily serving of vegetables.
