The Boyfriend watches an obscene amount of football on Sunday’s. I, however, don’t really watch football at all. Something about fantasy football…blah blah blah…he has to beat his friend…blah blah blah…whatever!

Football Sunday’s are a time for me to relax, surf the internet, and whip up some interesting creations for him to try during the game. Boyfriends are great guinea pigs 🙂

On the menu for today were two of his favorite food items ever put together into one dish!

Biscuits and hot dogs!

(Good thing his favorite foods aren’t something like pickles and ice-cream. Ewww, not a good combination.)

Once again I was staring at my pack of whole wheat pita bread (which I always have on-hand) and trying to come up with a new way to serve them up for lunch.

Healthy No-Tahini Garlic Hummus?  Sounds good to me. Especially because it takes about 5 minutes from start to finish.

I mean, tahini is kinda expensive (at least for me), so it’s nice to NOT have to use it while still enjoying wonderful fresh-tasting hummus.    Plus, it’s always nice to be able to  make a recipe with things you already have in your pantry and avoid having to make a trip for that one item you may not have at the moment.

This recipe requires the simplest of ingredients and can be adapted in countless ways.  This was my first attempt at homemade hummus and I browsed through dozens of recipes until I came up with this winning combination.

Mark my words: I will never buy store bought hummus again, it’s way too cheap and easy to make.

There’s something about feta, spinach, red onion, a drizzle of olive oil, all on a toasty whole wheat pita, that makes me so excited!

I usually, okay…pretty much always… have whole wheat pita bread on-hand.

Boy was I happy I had it today.

These Mediterranean Whole Wheat Pita Pizzas were out of this world, and my boyfriend agreed whole-heartedly.
