Oatmeal is a blank slate. It’s a perfect way to “healthify” your favorite desserts. There are endless toppings, mix-ins, and flavorings that make it a new experience each and every time. 

I am obsessed with oatmeal! 

 I’ve already shared my Banana Foster Oatmeal recipe, which is a definite winner in my book, and now I’ll share the Apple-pie oatmeal recipe that give me the warm flavors of “Fall” in a perfect little bowl 🙂

My favorite meal to experiment with, besides dessert, is breakfast.  There are so many different ways to flavor oatmeal, such an array of pancake recipes, and tons of ways to cook up eggs.  Yesterday I was inspired to make “Breakfast Quesadillas” as a Sunday surprise for my boyfriend.

If you’re like me, you are always scanning restaurant menus for dishes that sound tasty, but won’t leave you feeling like your diet went down the drain.  What do most people think of when they think healthy?  SALAD!  Of course, lettuce, tomatoes, and all the veggies you can imagine are always major components of a salad.  The only problem is, most salads served in restaurants or fast food establishments are far worse than having the darn hamburger and fries!  Just check out this list of best and worst restaurant salads!

Now, after reading countless books, health magazines, and online articles, I’ve compiled some tips/ideas on how to order the healthiest salad possible, while still feeling satisfied with your meal.  Don’t get me wrong, I don’t stick to my diet 365 days a year, but I also don’t feel the need to pack in 2,000 calories in one meal at a restaurant (and if I was, it sure as heck wouldn’t be a salad!).

Bananas Foster Oatmeal: Breakfast or Dessert???

Breakfast has recently become my favorite meal of the day. It’s so versatile, you can whip up a savory egg dish, a decadent pastry, or even one of a multitude of oatmeal creations! Since I tend to have a sweet tooth, I love that I can get away with having dessert for breakfast and not feel guilty about it (you know, as opposed to a slice of cheesecake for lunch! Haha).

Healthy Yogurt Toppings!

20110915-085211.jpgLately I’m on a Greek yogurt kick. I buy flavored yogurt for The Boyfriend and plain fat-free Greek yogurt for me. I am in complete awe at the high protein content and why I had never converted before! Yogurt is what I run to when I’m craving something sweet, and due to my sweet tooth, I have played around with quite a few ingredients.

Here are a few of my favorite yogurt mix-ins! I’ve tried to keep them on the healthier side, if I’m going to have a quality snack like Greek yogurt, I don’t want to overdo it with the add-ins. Also, since I use plain yogurt, I have more flexibility with what I add to flavor the yogurt.

Enjoy 😛

  Plain yogurt with:

  • honey drizzle & chopped nuts (walnuts or almonds are great)
  • toasted coconut flakes & Splenda/Stevia extract
  • 1/8 tsp coconut extract & Splenda/Stevia extract
  • 1/8 tsp vanilla extract, 1 tsp unsweetened cocoa powder, & Splenda/Stevia Extract
  • Fresh fruit (especially berries: strawberries, blueberries, and raspberries make it seem like a dessert!) (more…)

Once again I was staring at my pack of whole wheat pita bread (which I always have on-hand) and trying to come up with a new way to serve them up for lunch.

As I looked in the fridge ideas started swirling around and finally started to come together.

It was a Tuesday evening, I was relaxing, just sitting on the couch watching Food Network, when I suddenly felt the urge to eat something sweet. I did mention it was Tuesday right?  Now, I am not normally one to indulge in a dessert on a weeknight, so I quickly began flipping through recipes I had clipped, printed, saved, etc, for something that would satisfy my craving, however, not cause me to feel like I tossed my diet down the drain on a Tuesday!

Then I found it. I found a recipe for Peanut Butter Oatmeal Honey Balls that were too good to be true.
