My previous post had pictures of my Pancake Party, but I promised the recipe.
Here’s the recipe for the best pancakes I’ve ever made/had!
They’re crazy fluffy, super yummy, and were very easy to cook up. They were a huge hit at the party.
First, place the milk and vinegar in a bowl to sour (I don’t like to buy buttermilk because I always have a ton left over). As the milk is souring, combine dry ingredients and whisk to break up any clumps.
P.S. I’m making pancakes for 20 guests! You will most likely have less batter to deal with 🙂
Mix the eggs with the melted butter and vanilla. Then, add to the soured milk.
Combine the “wet” and “dry” ingredients and whisk. Not too much! We want them to be light and fluffy.
The batter should look something like this (but on a much smaller scale).
This is the point that I split the batter into 3 mixing bowls and made each bowl of batter a different flavor.
One was chocolate chip, one was cinnamon banana, and I left one to be traditional buttermilk pancakes.
Now, use a 1/4 cup measuring cup to form your pancakes on a preheated griddle. Cooking spray does the trick to get them to brown up perfectly and come away from the pan without a problem. This is where my Cuisinart Griddler worked it’s magic! These pancakes seem to do a great job of letting you know when they’re ready to flip. They, quite literally, puff up and rise and shout “flip me!”
Perfectly golden!
Now, just keep flipping and spraying, and spraying and flipping until you’ve used up all your batter!
And there you have it. Perfectly Perfect Pancake Perfection.
Add toppings of your choice. As you can see, I couldn’t choose. I just pretty much went for them all!

Best Ever Pancake Recipe
Serves 6
Ingredients:
1 1/ 2 cups milk (whole or reduced fat)
1/4 cup white vinegar
2 cups All Purpose Flour (or 1 cup whole wheat/1 cup A.P Flour)
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, beaten
1 1/2 teaspoons vanilla extract
1/4 cup melted unsalted butter
Non-Stick Cooking Spray (I use butter flavor)
Directions:
1. Combine milk and vinegar in a large mixing bowl and allow to sit for 5-7 minutes. This will sour the milk.
2. In a medium sized mixing bowl, combine dry ingredients such as flour, sugar, baking powder, baking soda, and salt. Sift or whisk to make sure there are no lumps.
3. In a small bowl (or I just used the liquid measuring cup since it was already out) beat the 2 eggs with the melted butter. Add vanilla extract and then combine the egg/butter mixture with the “soured” milk.
4. Now, add the dry ingredients to the wet ingredients and whisk until incorporated. Spray griddle and set to approximately medium heat. Pour 1/4 cup scoops of batter onto the heated griddle and allow to sit until bubbles start to rise to the top of the pancake. Once you see those bubbles, carefully flip and brown the other side.
Note: If the batter is a bit thicker than you like, add a teaspoon or so of milk until it is at the consistency you desire.
Hint: These pancakes are magic! They seem to begin levitating when they are ready. They really do rise when they are ready to be flipped. It makes it very easy to cook them to a perfect golden brown.
Remember to personalize your batter.
-Add cinnamon, nutmeg, and bananas!
-Toss in some chocolate chips and walnuts.
-Mix in any berries that are in season.
The possibilities are endless!
